Summary
This brew started out as a question of "What should we do next?" after we did a few Brewer's Best kits. We began searching the internet and stumbled across Ura's Honey Pale Ale over on Brew-Monkey.com. It looked interesting, so we grabbed a copy and headed off to the local Home Brew store. The ingredients you will see listed below is what the local Home Brew store gave us in substitute for what was on Brew-Monkey.com's site.

Ingredients
- Sugars
- 0.5 lb Light Dry Extract
- 4.0 lb Ultralight Malt Extract (See note below)
- 0.5 lb Honey Malt (Crushed Grain)
- 3.0 lb Clover Honey
- Hops and Yeast
- 1 oz. Cascade hops
- 1 tsp Irish Moss
- 1 vial California Ale (White Labs) (Wet)
Instructions
Pre Boil Instructions
- Steep Crushed grains into 2.0 gal at 155F for 30 mins
- Add remaining malts and bring to boil
Wort Boil Instructions
- 60 min: Add 0.5 oz of Cascade Hops
- 15 min: Add Honey
- 15 min: Add Irish Moss
- 1 min: Add 0.5 oz of Cascade Hops
Fermentation Instructions
- Primary
- Length: About 1 Week or until bubbler slows to about 1 minute between bubbles.
- Strain Wort into Primary Fermentor
- Add Yeast
- Secondary
- Length 3 Weeks
- Transfer into Secondary Fermentor, avoid trub.
Bottle Conditioning Instructions
- Length: 16 Weeks at least
- Dissolve Priming Sugar into 4 Cups of Boiling Water
- Bottle in 22 oz Containers
Notes
- This beer was the first one we tried our straining method on. After cooling the wort, it was poured through a wire mesh to get out the spent hops and such. This method produced a much clearer final product as well as a product with a much less "earthly/planty" taste to it. Previous beers from Brewer's Best kits (which say that straining is not needed, IIRC), but produced a beer with a "funk" that I can only describe as "earthy" or "planty." Whatever it was, it was not very desirable.
- This beer turns into something FANTASTIC if bottle conditioned for >5 months. The remaining yeast eats all of the sugars from the honey that are left turning it from a sweet beer at 1 to 2 months bottle conditioned, to a fine pale ale after 5 months. It is highly recommended that one lets this bottle condition that long.
- Normally, the Ultralight Malt Extract comes as a wet extract. If you can find it try, it comes out a little better.

- Location: Prof. Eric Rice's farm.
Brew Specific Notes
- Used hardwater from the farm instead of the filtered Baltimore City water used before. This made for a more intriguing taste.
- Bottled ONLY in 22oz. containers.

- Back to the original Filtered water. Adding 1/2tsp Yeast Energizer to primary.
- Doing Primary in 6 Gal glass carboy.
- Using "Super Moss" in place of Irish Moss.
- Used Orange Blossom Honey
- Planned to bottle into 2 party pigs.
